In my experience chili competitions at work are full of people that don't like chili. I make an awesome chili that has one a couple other competitions, but at work people always go with the one that tastes sweet (?), tastes overwhelmingly like ketchup or has cinnamon in it (Cincinnati chili isn't chili). I start mine a 2am so it can cook all night and morning, mine has chiles in it and therefor is always too spicy for 80% of the people there (even though I tone it down to a barely noticeable heat level).

I've learned to make a small amount for such competitions and save the rest for me at home if I'm one of the few who can appreciate real chili.

I have shamelessly stolen Revvys Firebrick recipe as my own for our annual chili cook-off with great success. I don't have his Mole Porter beer for it though (maybe I could get a bomber for next year, eh Revvy?!) I forgot what I used this year, probably just a St.Arnolds Brown Ale. I place with this recipe every year, it's great. I get some really great comments about the meatiness and the spices. It's super easy to make, just make sure you have a Mexican grocery store available to you, some spices are hard to get at your local Piggly Wiggly.
