I tried pickled watermelon rind yesterday for the first time and LOVED it! Now I'm on a quest to find a good recipe. I'm checking Google and food blogs, but I thought I'd see if any of the DIY foodies here have any recipes or experience with them.
My grandmother use to make this a long time ago; she called it "watermelon surprise". I remember her using vinegar, sugar, & water. I wasn't too fond of it...
