Default Master BBQer.

Any BBq PROs out there?

I'm BBqing for 200 on Sunday.
The most I've done before is 45 friends at a party or 90 public at a venue.
I'm just supplying myself and the grill. My only remit is that I won't grill rubish.

Any tips for coping with that volume?

What kind of menu and are you the only cook? Used to work on a pro team for the Houston Rodeo years and years ago. 18 wheeler with a 20' Smoker and a 10' Grille

I have a 4ft charcoal grill, I'm the only cook (but will not be serving). It's a budget menu $6 a head but I'm not shopping.

How big is your grill? If it were me, I'd be smoking pork shoulders for Pulled Pork sandwiches.

Here's about 70 pounds of pork Boston Butt cuts getting ready to smoke for 22 hours. It yielded about 40 pounds of meat and would make about 200 sandwiches.



Here they are after 20 hours.


Here's what the finished product looks like.


If you can't smoke some meat, I recommend chicken quarters and brats.

If you have any say in the menu, and can smoke, then Ed's Idea is always a crowd pleaser. If you want some variety, Brisket can be served in MANY ways, Chicken is a REAL tough one to pull off well, because if you do not time it correctly, it will get slimy on you (chicken has a very short "premium" serving time) Sausage is an easy crowd pleaser with very little effort. Ribs can be a pain in the arse unless you will have help prepping them (removing the membrane off the inside) Can you give us some idea of equipment or how much input you have to the meats being served?

When you say "barbecue", what do you mean? burgers? dogs? steaks? chicken? or actual pork barbecue?

I think you should just send 'em all to Edwort's house!

I smoked some ribs and a chicken a couple of weeks ago on My first brew day. It was a pretty good day! Nothin like smoking and brewing all in one day!

Well with 4 foot 200 people and a budget it will be grilling not real BBQing.

I managed the 90 last year without a problem. I have a meeting to attend on Friday so I'll be laying the ground rules then. If they want on the bone chicken then it'll have to be 90 cooked and fetched straight to me hot for finishing
