Default Last Night's Meatloaf

2 pounds of hamburger
1 pint of fresh tomato, onion, cilantro, garlic, and pepper salsa (fresh and big chunks)
2 eggs
3/4 cup crushed goldfish crackers
2 cheddar cheese sticks

Mix everything but the cheese in a bowl. Fill half a bread loaf pan, then add the cheese sticks, then cover with the rest of the meat.

Put that on the grill for about 45 minutes, or until it reaches 155º in the center. Put some cheese on top (I used two leftover bags of shredded / sliced) and cover with 1 can of tomato paste. Cook for another 10 minutes and serve.

Pair it with a stout, and serve with a starchy side.

hmm. Sounds good. I might try it with some ground elk I've been waiting to try!

Cheese, you need to move a few miles north so you're in Wisconsin. That sounds more like a cheesehead recipe than a flatlander one.

Sounds good, though. I think I'm gonna have to try that one soon.
