Default Damn Good Eats

So I rubbed a pork shoulder 2 pcs (6lbs each) with Alton Browns rub- Let sit for a day in the fridge

Then smoked it for 3 hrs over lump charcoal and a mix of Alder and Apple wood.

Put in the oven because I didnt want to use 30$ worth of Charcoal. 3 hrs uncovered in my turkey pan and then another 3 covered with foil.

When it was time to take it out it was damn near impossible due to the fact that it was falling apart so easily.

Looks- 1/2 red (from the rub) another 1/4 in you can see the smoke ring. Middle perfect consistency and the wife says shes never had such moist pork.

I love it when a plan comes together!

Alton is impressive... the only cooking show where recipes are literally reduced down to a science! I am doing some study on smoking, so that I can do a brisket this 4th of July for my neighbors and us. I am really very excited, I cannot wait to taste it!
