Ed,

Will an egg go all night without any intervention? My ECB needs to be fiddled with every few hours or so. Does it use a water pan for steam?

P.S. I took a six pack of Apfelwein to my parents house for Christmas Eve dinner and they loved it. They put in an order for more.

My egg goes for 22 hours without any intervention with my BBQ Guru Pit Minder E-Temp. It's an electronic power draft control. Just set the temp and get a good nights sleep.

Ahh, it's almost 11 PM and I'm enjoying a nice glass a clone of Anchor Porter and I'll be putting a fresh brisket on the egg for tomorrow's dinner. The crisp night air with the smell of mesquite and hickory wood smoke is fantastic.
