Default Chocolate and beer?

What do you think of brewing chocolate in your beer? How do you have to handle it in fermentation? What do you think of the flavor pairing? Better in a stout, a porter, or (surprise me) a weissbier, etc.?

I have made several chocolate stouts and enjoyed them. SWMBO has a chocolate wine she enjoys and I am playing around with an idea for a hint of chocolate mead.

Got a chocolate porter in secondary right now with cacao nibs. Should be ready to bottle this weekend.

My buddy brews a white chocolate stout (won't share the recipe) that is like a desert beer, it is so tasty :P
