I know you are supposed to grill on labor day, but I like to braise beef ribs. Dry rub for two days, smear with tomato paste, roast until nice and black then braise in redwine, brown stock, and whatever else. Of course skim the fat.
Now that looks good.

Never had time to do anything else.
