Default BGE Beef Tenderloin Roast

A few hours before cooking, coat liberally with Bad Byron's Butt Rub (just bought more from Amazon - 1.5 lbs for $18!). Sear on all sides over as hot a fire as you can make - takes about 5 minutes. Smoke over indirect heat at 275° F until medium rare - about an hour. I used a medium sized hickory chunk, but I bet apple wood would be even better. Rest, slice, enjoy!



Mine tasted great with a Negra Modelo.

It really only took an hour to get to medium rare in your smoker? Or is that a mis print?

No, it took an hour and 15 minutes. Tenderloin roasts tend to be rather small. This one was about 3 lbs.

That ain't a roast. That's a steak! Roast implies that I would share it with someone else and not just eat it with a baked potato and a small green salad.
