My first thought was to try with something a bit malty, like some of the bottles of Blue Moon I have in the fridge. But rather than some crazy experimenting with the whole family's holiday dinner, I figured I'd ask around first.
Well, it's not exactly a beer glaze, but this was as close as I could find:http://allrecipes.com//Recipe/bone-in-ham-cooked-in-beer/Detail.aspx
It doesn't seem all that different from this recipe:http://allrecipes.com//Recipe/ham-with-pineapple/Detail.aspx
I've actually made the 2nd one & it was pretty darned tasty. I'd think to make a beer glaze you'd need to reduce the beer, which would remove the alcohol. I've reduced porter, stout & brown ale to make sauces & had the best results with the porter. I also added things like soy sauce, spices & honey, even fruit.
I also found recipes for ham boiled in beer:http://dumluks.blogspot.com/2006/02/ham-boiled-in-beer.html
And a couple of beer glaze recipes for ham, but there's not much beer in the glaze:http://www.tasteofhome.com/Recipes/Beer-Glazed-Ham
Just be sure to let the beer you reduce go flat before you start to simmer it; it'll foam all over if you don't. Regards, GF.
