Youmay use the yeast in your fermenter to make bread.
I suggest following the instructions in the yeast washing sticky to at least separate the undesireables from your dining table, some of that stuff you don't want in your bread.
If your (cleanliness) technique is good you could just dump in the gallon of water, swirl, decant to a clear pitcher, pour off the top goop, and then use the liquid and yeast in the creamy white middle layer for your bread.

There was a recent thread about using spent grains in a bread recipe as well, a two parter with sourdough in one bowl and spent grains with some yeast in the other... I am mashing right now, but I'llbe looking it up in a few hours.
