Default Wood for a Mash Paddle?

I'm thinking about crafting a mash paddle. I know most are made from maple, and that they should be unfinished hardwood. I am not going with Red Oak as it has open grain. My plan is to see what is available in my buddy's scrap/surplus bin first before venturing to the store.

Any woods I should stay away from?

I went to the local Woodcraft store and picked up a 40" x 5" x 3/4" piece of hard maple for $4.36 yesterday. I ran it through the joiner and planer last night and it cleaned up nicely. Starting to work on my pattern tonight.

Back to your question, I would obviously avoid any softwoods or any oily tropical hardwoods. I was looking to stay in the poplar, maple, ash area to get a hard, dry workable species.

I didn't have any maple on hand when I made mine so I used white birch.
