While I don't know as much as some of these guys as far as gas and plumbing goes...here's what I used, and it works....

Temp probes: http://www.auberins.com/index.php?main_page=product_info&cPath=15&products _id=96

Controllers: http://www.auberins.com/index.php?main_page=product_info&cPath=1&products_ id=106

Valves: Honeywell VR8200A2132
Pilot: Honeywell Q314A4586 Pilot Burner
Thermowell: http://www.pexsupply.com/Honeywell-Q390A1046-24-Thermocouple-1721000-p

Everyone can wire theirs up as they'd like. I have one sensor mounted at the back of both the MLT and HLT.

You can use any number of controllers, such as the Love controllers linked above and used in the original brutus build, or Ranco ETC-11000's, or Johnson A-419's, or the e-bay STC-1000 aquarium controllers. There are multiple options for probe placement. I have my temp probes installed at the MLT return, and in a thermowell in the side of my HLT. As far as connecting, you'll need to run power to the controller, one leg of power to the valve, and the other leg of power through the controller to get switched and then out to the valve. Just think of the controller as a switch that turns power on and off. If your valves run on a different voltage than the controller (12V, 24V etc.), you'll also need to use a transformer.

I bought some simple on/off temp controllers off E-bay. These control the solenoid valves on the burner gas lines. Pretty simple but effective.

Santero, when you get your stand together, please post. I am also doing my homework in order to build a brew stand and would love any info/local supplier information you can share.
