Keep in mind I haven't even brewed my first batch yet, so take the above thoughts with a grain of salt.
I've used mine with pineapple, oranges, hops of course, peaches, and a few other various fruits. Pretty much anything you can think of will work as long as it won't get sucked through the filter. I tried using strawberries, but it didn't work out too well.

I built my first Randall six years ago. They work best with about an ounce and a half each - I pick up three 2 oz packs to fill the two housings. I have used only an ounce in a pinch, but a good portion of the bowl will have only beer, and it looks better full of hops!
Here it is at last year's NHC in Oakland:

I've seen the cartridge filter housings for sale online, but are they available at hardware stores?

Just curious before I go searching...

I found this one, added the fittings, and installed a plastic tube with drilled holes. Just need some beverage tubing and a picnic faucet to get it going.

I've read that you should use 10' of tubing between the randall and faucet to reduce foam.

Is this true?

Definetly true. I use 15' on mine and I still have foam. I only use my randall anymore when I'm planning on finishing a keg in one night. I can turn it down to 5psi because of this and it serves pretty nicely.

Just fine. You might not get as much flavor out of the hops since they contain so much water, but it would be fun to do.
