Conical build help?

I have a SS Conical that I would like to convert to a fermenter. It has a hole at the bottom and a lid that loosely fits on top.

So I need a way to seal it, I was wondering if I could use some kind of large gasket with a good flat surface area? And if so what type of gasket do I have to use so it would not react with anything. I also wanted to drill and add a port for racking above the yeast cake peak. But I am not sure how high up I need to go, or what type of valve to use.

I used www.mcmaster.com part #8525T64 to seal the last ones that I made.

Use this racking arm, 6" from the bottom of the hopper.
