Default Butterfly valves - Anyone use them or have knowledge?

Has anyone used butterfly valves for metering flows through their system? I am considering using them in place of ball valves. The one sold by B3 have 12 positions for consistent positioning.

Will these be able to restrict flow from a pump like a ball valve, or will they be more of an on/off type thing on a HB scale?

I looked but can't find any steppable sanitry b valves smaller than 1". So, they'd operate like a ball valve.

You will have better control with a ball valve than you would with a butterfly valve. Butterfly valves have fixed positions where the valve will be open, so it does not give the fine tuning adjustments a ball valve would give.

It looks to me like ball valves are the way to go for controlled pumping.
