I'm in the design process for my brew stand and I'd like to use the following Banjo burners:

and it looks like I will need this regulator (I'll be using a 20lb propane tank):

I only plan to have 2 burners to begin with and will add a third if I ever switch from mashing in a cooler to a recirculating fired mash tun.
and it looks like most people use this valve or something like it:

and black iron pipe (1/2" ?)
Can that valve be used to regulate the flame on the burners or is it just an on/off valve? I would prefer to be able to regulate the burners separately, but I will probably never actually use both at the same time.
Should I be ok with the orifice that comes in those burners? Seems like some people are modifying them (why?).
Is this considered a low pressure, high pressure, low BTU, or super mega flames of death gas system?
Is the hardware to connect the regulator and burners to the iron pipe readily available at HomeDepot/Lowes?
