Cool. Let me know how it turns out. I would just let it ferment and once it's done bottle carb like normal. While a quick beer, it is better with more time.

I think I've got it figured out You put me onto something.
Because I'd like to try it both ways I'll just brew the whole damn grain at once. (full version) and take about 2gal into my 3gal better bottle and bung it up and continue the other 3 gal as normal bottle conditioned. This way I get the best of both worlds. Depending on how it turns out I might make it my house ale. Time will tell thanks everyone for all the great info.

hehehe good choice picking the Louisville background. Just about anything that comes out of Lexington isn't worth a cent

I also like the idea of a rural background. Maybe something horse/racing related? I guess Keeneland would be ok

I'm from Louisville, temporarily here

I had an old picture of Churchill downs that I liked, but I figured the old brewery picture worked better in the second one.
