I like the revised tail.
Only I was kinda hoping you'd eventually go with "Happy Fish Brewing". It's kooky and I like it.

i know this doesnt help much but first image i thought of when I read your brewery name was a cactus with the top cut off and some kind of fish swimming inside in the cactus-water.
