Default First sake brew - phew better take this slow

I don't know for sure that I ever even had sake before, but I brewed a couple batches a couple months ago. I just bottled them up today. Wow the white rice sake came out strong. It tastes like it needs to age a bit more in the bottles although it's not bad. I can feel it coming on strong and I think pouring out a large water glass full of it might have been a mistake ... will see as the evening churns onward ... I want to go out to the garage but am afraid I might not be able to find my way back to the house after ...
