For the first time you can order fresh, wet hops from Austin Homebrew Supply. We are accepting pre-orders for them until August 10th.
Cascade - $18.99 / lb
Centennial - $18.99 / lb
Chinook - $18.99 / lb
Citra - $18.99 / lb
Simcoe - $18.99 / lb
These fresh wet hops will be picked from the vine and then immediately shipped to Austin Homebrew. Once we receive the hops we will immediately ship them to you.
Wet hops can be used at any time in the brewing process, but used best for flavor and aroma. You will need to use about 5 times more wet hops then pellet hops. If a recipe calls for 2 oz of pellet hops you will need about 10 oz of wet.
Wet hops have a beautiful, fresh aroma and flavor, but should be used within 10 days of being picked. The sooner the better. The cooler the better. If they are not going to be used soon then they need to be dried, vacuum sealed, and stored in the freezer.
PLEASE READ THIS PART
All of the different varieties of wet hops will arrive on different days. Since the hops need to be immediately shipped once we receive them you will need to make separate orders for each type of wet hops, and nothing else can be in the order. You will be charged for the hops when you order them.
The hops will arrive at Austin Homebrew sometime between Aug. 25th and Sept. 25th.
Update:
Cascade, Centennial, Citra & Simcoe wet hops are arriving on Thursday, 9/9. 1st come, 1st serve if you didn't pre-order

I brew with wet hops every year when my hop harvest comes in. Excellent flavor...very different from normal hops. If you like hops...you'll like it.

In my experience with my own home grown hops they typically end up weighing about 1/4 their original wet weight. I never actually checked this, but I'm sure that's close. Anybody know for certain?

There's really no good answer for this unless you send out your hops to be tested for AA%. Because wet hops are about 70-80% water, the AAU's are less than condensed pellet hops. A good rule of thumb is to add about 6 times the amount of wet hops. If you need 1oz, add 6oz wet. It sounds like a lot, but if you were to dry those 6oz, they'd probably come out to around 1oz.

i brew with fresh hops i grow in my backyard. i'd say the hop flavor is very "bright." it can taste a bit grassy, but not in the way that dry hopping for too long can. it's a more wet, bright, refreshing "grassiness." think of the sitting in the cool grass on a sunny day compared to sitting in a pile of dry straw.
i usually just use the wet hops to supplement a recipe. I'll usually make a PA, IPA, or CDA with a normal recipe with last years hop pellets, then add copious amounts of wet hops to the flavor and aroma stages of the boil.
i have used wet hops for wet-dry hopping. nice bright aromas.
i've never used them in a hopback, but this guy has:

I'm just trying to figure out what a pound will shrink down to in weight. Would 3 dry ounces be about right? If so, that's a bit steep considering the per pound price with shipping.
I'm looking for about a half pound of fresh dry hops of cascade to supplement mine and for comparison. If I had to buy a pound for a deal that would work too. What's the best way to get my hands on them near harvest time?

Honestly, I've never seen a company sell wet hops like this. I personally wouldn't use them for fear that shipping would take too long and they'd lose their potential. Try posting on craigslist to find out if there's any local homebrewers around you growing hops who wouldn't mind if you bought some off them. Most homebrewers would probably give you some.
A pound of wet hops would be the equivelant of a little under 3 ounces dry. That's when picked directly off the vine though. These hops are going to be a little more dry because of processing time I'm assuming. I would guess you'll get around 4oz for the 18.99. That's not a bad deal concidering the speed that you'll get them too you.
