Pardon my ignorance, but I see these are from 2012. Are there any issues with using older hops? Does the bitterness/odor degrade?

No issues, they have all been stored properly in a freezer and are still in great shape.

There is some loss of AA and you can find online calculators, the AA loss starts as soon as they are picked and is mitigated by how they are packed and the temp they are stored at.

We are packing this up everyday and trust me they are very nice hops
