Forrest, could you tell me what the main differences between your Bavarian Wheat recipe listed above and your 21st anniversary special that is on sale this week? I'm looking to brew a Hef and both of these sounded good. Thanks!

Oh, and I'm an extract brewer.

Excellent question. The Bavarian Hefeweizen will have just a little bit more body, and a hint of floral and spice aroma from the hallertau hops. The Anniversary Hefeweizen is a little lighter in body, with no hop aroma. Cheers!

Thanks! Also, should have asked this before but I just noticed the recommended yeast varies a little between White Labs 300, Wyeast 3056, and Wyeast 3068. Could you tell me what what your opinion of these different strains are? I know I can research them but thought your reasoning for selecting them on these specific recipes would be more helpful. Thanks again...tough decisions lie ahead of me.

Both White Labs 300 and Wyeast 3068 will offer noticeable banana and clove character. Wyeast 3056 is more subtle. It really comes down to whether you want those banana and clove notes in your beer or not. With so many great options I can understand why it's a tough decision. The decision you make will be the right one.

I just fermented 3068 at 65F and got no banana, big clove. Maybe this strain is more temp dependent than 300 so consider temp.

awesome thanks. I'm probably looking for more banana than cloves but not be too overwhelming. I do want to notice it though. Either way I'm sure I'll get a great beer.
