Some yeasts (like S-04) add a very distinctive flavor. Others (like Nottingham) add very little. The only real way to find out what the differences are is to try the different yeasts. I've found this to be very useful, and quickly learned what yeasts I like for different styles.

sa-05 and notty are both very clean yeasts, so they won't give off too much of a flavor. They are more or less interchangable.

as far as dry and liquid yeast its a matter of preference and availability. with the liquid yeast, depending on its OG, you will need to make a starter or use more than one pack/tube of yeast for the batch. with the dry yeast you will need to rehydrate the yeast in warm water before use. depending on the size of the packet of dry yeast and the gravity of your wort you may also need a starter or more packets. liquid yeasts give you more variety because most yeasts cant survive the drying process.
