I am making a basic citrus wheat recipe that calls for using the peels of 2 lemons and oranges at 10 minutes. Would there be any reason to add the squeezed juice from these to the boiling wort in the kettle at the same time?

thanks,

Mick

Here is the modifeid recipe I want to try. 5 gallon

5.5 lb white wheat
3.0 lb pale malt
1 lb flaked wheat
0.5 lb honey malt

0.75 oz glacier (first wort hop)
0.75 oz glacier (60 minute)
0.50 oz glacier (10 minute)
zest of 2 oranges/lemons 5 min

forbidden fruit wyeast 3463

Any other comments on possible changes will also be welcome.

Just be careful that you don't lower the pH too much to inhibit fermentation. I am not a chef so I can't explain why people use citrus peels soaked in vodka over juice...maybe pectins?

I used 1/2 oz of packaged orange peel (sweet) and then LIGHTLY zested 2 lemons. Make sure you just zest the outer part to get the sweet lemony taste. It tasted AMAZING.

I don't know about adding juice, it probably will taste how you expect it.
