Default Will Two small starters work?

From what I read on the wiki, a half-gallon starter is ideal. I don't have a half-gallon container, but could I use a pair of quart mason jars successfully? I know I could use a pitchable vial, but I figure if I'm going to pay more for liquid yeast, I may as well do it right.

2 small starters will work fine. What's the planned OG of your Wort going to be?

As long as the volume of yeast is good, it don't matter how many containers you make it in.

Also, when making a starter, do you use part of your extract for the brew, or a separate amount? IE if I'm using 6 lb of extract, do I take out a 1/2 c of that to make my starter, or do I buy more extract instead?
