Default Will this recipe work???

Ok, so I'm trying to come up with a recipe for SWMBO. She does not like dark beer, at all, and is a big fan of BMC (Bud Light to be exact). I don't currently have the ability to brew a lager (i.e. a swamp cooler or extra fridge) so I was thinking of doing something along the lines of a Kolsch. This is what I've dreamed up. Any ideas how this might turn out??

5.00 lb Extra Light Dry Extract
0.50 lb Caramel/Crystal Malt - 10L - Steep for 15 min @ 160F
0.75 oz Cascade [5.50 %] (60 min)
0.50 oz Crystal [3.50 %] (10 min)
0.25 tsp Irish Moss (Boil 10.0 min)
0.50 tsp Gelatin (Secondary 5.0 hours)
1.00 lb Corn Syrup
1 Pkgs Kolsch Yeast (Wyeast Labs #2565) Yeast-Ale

I'm actually thinking of splitting into two secondaries and racking onto about 3 lbs of strawberries in one.

Ok guys, tear it up!!! Thanks

Sure it will work (Not sure about the strawberry's no experience with the fruit yet). Try Some CaraPils in it to add to the mouthfeel a bit too. But if you want something tried and true try Bier Munchers Centennial Blonde. There is an extract recipe on the first page. The all grain is outstanding as far a light ales go. My friends prefer it to a BL anyday.

I don't know about the corn syrup. I'd use corn sugar, but I don't know if I'd be using corn syrup.

Got it, change the syrup to sugar. {{NOOB QUESTION}} Would I put the corn sugar in during the boil? I"m assuming so....

You said you don't have the ability to lager - typically a kolsch is lagered for a few weeks, can you do that?

yeah i did a lager the other day which only had .5lbs of cara pils... I dont have a extra fridge either but i have a garage which stays at a constant 48-50 degrees all winter long... if you do too then you can lager too... or you chould try a Cream of Three Crops and just ferment with as an ale, its a good beer... or Edworts Hoss Pale Ale... thats not a dark beer, and its so easy to make and it fermentes really easy too, in fact thats kinda what you have here except with out the 2lbs of munich and hopped differnt... im in the mind of no fruit in beer kinda person, i keep my ciders/wines from my beers... and fruit can complicate the process... and in my opinion it doesn add to the taste... i will run this though my brew ware for you and see what i get

Edit

ok i ran it though my brew ware and i think you might be under hopped as you are.

I have you at your OG being between 1.058 - 1.065

Your FG at 1.018 - 1.009 (this is gonna take awhile to get here with your berries in that one secondary)

Total Ibu's 19.7 (which is 4.5 times that of regular bud wiser, not sure if your wife will go for that)

ABV 6.5% - 7.4% (add another 1-2% for the strawberries in that one secondary)

Think about this a bit harder

cheers
