Just curious a to why it's called a HLT when all it is is a vessal to heat water to the specified temp. At least I think thats all it's used for.

You're correct in terms of what it's used for, and I think it's just part of the brewing nomenclature where the water used in brewing is referred to as liquor. Hot liquor = hot water.

I had 5 gallons of Vodka waiting to mix with my extract kit.

It's for cooking food while you brew. Obviously.
