Default Why boiling the wort?

Hi,
I'm keen on trying more advanced recipes and wonder why I need to boil the wort?
Some of the recipe I found give me different boiling time for 1/2h to 1h,why?

The word brew means to boil. While you can cheat on extracts, as that wort was essentially boiled during its' production, boiling does a number of things including sterilization, hop extraction, hot break creation, color, etc. Get a good homebrewing book like Palmer's "How to Brew" which will answer most of you brewing questions and give good explanation of techniques, ingredients and styles.

Also boil times vary due to different requirements of boil off and caramelization among other things according to the style of beer being brewed.

+1 on "How to Brew" also pick up "Brewing Classic Styles". Those 2 books will get you a long ways.
