When to O2 the cooked wort?
After I boil it and plop it in my utility sink - i throw my airstone in.
Does it matter at what temp I start? Should I cool it down to my 70's range and then do it?

You want cool it down before you add oxygen. I do it as the last step before pitching yeast.

Oops, i've been doing it hot.

Aerating it hot will mostly just make it go stale faster. It's called "hot side aeration" if you want to google. But you probably aren't going to age a hefeweizen for 2 years anyway so it might not matter. Just start drinking early and often
