S-04 or Nottingham are good options for dry yeast in a brown. They are English ale yeasts and tend to leave a little sweetness behind which is what you want in a brown.
S-05 mentioned above is more of an American ale yeast and will dry it out more.
Thanks for the clear, concise explanation. I think I may go with S04 because that was one of the yeasts offered with the kit itself.
