Default What are chocolate nibs?

Been looking around at secondary additions to a chocolate stout and IM hearing about chocolate nibs and have no idea what they are....?????

They are the pieces of the beans that are left after the bean is cracked and roasted.

What you need to know about chocolate for brewing

If you don't want to read the entire post, nibs are the fermented, roasted and dehusked seeds from the Cacao tree. Nibs have a much higher fat content than say coffee. Therefore, when ground, it makes a thick paste called "cocoa liquor" (cocoa solids+cocoa butter). Chocolate is made by adding sugar, more cocoa butter and milk solids for milk chocolate.
