Default Warm to cold to warm...

Okay, dumb question, I know. But I have a few batches in the fridge now and need a little room, for a new couple.

If I had let it bottle condition for 3 weeks, the have had it in the fridge for a week, can I pull them back out and sit at 68? Or will that cause off flavors like skunking?

No, you'll be fine. Skunking is cause by light. And there's no harm in unchilling a beer, then rechilling it later.
