Default Twisted Tea Brew

So I've only done two brews so far. I'm trying to get a drink that tastes like Twisted Tea. The best I've had so far is by using honey, sugar, iced tea packets, with ale yeast. It turned out ok. I added some more tea flavor after fermentation and that helped. On my next batch I kind of want to add all the tea flavor after fermentation, along with maybe some honey and lemon, and not use honey for fermentation. If I wanted to just ferment using a malt, corn sugar, and the yeast, without a stong flavor (so I can make the tea the strongest flavor), what type of malt might I use?

Or say I even put tea and lemon in before fermentation, what kind of malt might I use that wouldn't make it taste like beer? That's what happened in my first batch.

I think you would have to use malted corn or rice for a clean alcohol. Since that's not really a LHBS item I would say honey and/or sugar would be your best bet. I would keep a modest gravity (1.045), add nutrients and use a low attenuating yeast at cool temps.

Then you add the tea, flavorings and sugar(honey) to back sweeten. You'll have to add a stabilizer to back sweeten and I'm sure sulfites to preserve the flavor of the tea and lemon.

I've never heard of the stuff until now but it sounds like you are on the right path. Your LHBS might actually be able to help with using rice or corn. You could just buy enzymes to convert the rice/corn, I just don't know anything about doing that. My understanding is that malted beverage doesn't mean malted barley but any malted cereal and is a way to get around paying the higher taxes if spirits were used.

It's a malted beverage, no spirits. Malted beverages are not as strictly controlled.

I do wonder if malted and spirited beverages were regulated the same if we would still have the selection of alternative malted beverages that we do.
