Default Tried my AHS Pumpkin Ale last night...

After two weeks in bottle, I figured I'd open one of my AHS Pumpkin Ales to see how it was coming along. Not bad...could use a bit more body, but I think another week or two in the bottle will help with that. I just wish I had doubled up on the spices. Could use just a bit more for aroma, but overall, not bad. I think if I were to brew this again, I might also use a bit more pumpkin with the specialty grains. I used about 4 lbs, but I might up it to 6.

I brewed the AHS Holiday Ale. My primary samples kinda lacked the spice notes that you allude to. I racked to secondary and added one cinnamon stick, 1/2 gallon of apple cider and a few whole cloves. Yesterday, I tried a secondary sample and I like where this is going. Can't decide whether or not to bottle on Friday (two weeks) or wait another week. With bottle conditioning I'd like it to be drinkable post Thanksgiving in time for the holiday season.
