Yes, anytime your beer or wort is exposed you have a risk of infection. You must sanitize any equipment that touches your beer.
I don't know about racking being a noob manuever- that's the only way to move it from the fermenter to the clearing tank or to the bottling bucket and to bottle it. You want to protect it from splashing so pouring is definitely out. You don't want to aerate it or otherwise oxygenate it once fermentation has begun.
