I took a reading on batch of BB Cream Ale that has been in the bucket for 10 days, and decided to take a sip. Dayum, flat beer tastes good! It'll be kegged on Monday, and I'm sure it'll be better in 2 weeks. This is my 2nd brew, the first was an English Pale Ale, and I didn't even think to taste it.

And always take notes. Tracking flavor changes throughout the process is an important part of the learning process.
 
What Dave said...what you tasted, how you felt while tasting, jot down things that were off or good...the more notes/details the better to refer to for future attempts or tweaks with the same recipe. You'll be glad you did later. ;)
