After secondary I cold crash that same bucket it's already in before racking. So:

primary -> secondary + fruit -> cold crash + gelatin -> rack immediately while still cold to bottling bucket/keg

Uh...usually a few days. I am actually kind of lazy about packaging, so I will cold crash for 3-5 days typically before I get around to racking it. I have gone as long as a couple of weeks, though.
