Default stout recipe

Hi,

I compiled this together via Brewtools. Just want to make a decent stout (haven't had much luck in the past).

Any thoughts or recomendations?

5 kg.English Chocolate Malt info.5 kg.American Black Patent info2 kg.Liquid Amber Extract info42 g.Hallertau (Whole, 4.50 %AA) boiled 60 min. info20 g.Fuggle (Whole, 4.75 %AA) boiled 15 min. info

Wait, does that say five kilos of chocolate malt? Is that the same chocolate malt that I'm thinking of? You would usually use about a pound (half a kilo), at most.

A half kilo of chocolate & a quarter kilo of black patent. A half kilo of black patent will make your stout taste like charcoal.

You should go for 3kg of amber LME instead of 2kg, otherwise it will be a relatively weak ale.

That should read 1/2 kilo of both specialty grains.

I was also thinking of using lactose to cream it up a bit. Any thoughts on how much to use?

That's still a LOT of black patent. I'd cut that back to 1/4 kg. Like somebody said, too, that's not a lot of extract; it'll be a pretty low gravity beer. I'd bump that up, probably to the suggested 3kg, and I'd also think about a little crystal malt in there for some sweetness and body. Maybe 1/4 - 1/2 KG of crystal 60?

As to the lactose, that'll add a little bit of sweetness. Are you going for a milk stout? If you go that route, you're looking at maybe 1/4 KG at most, probably a bit less. It'll also add some body.

Ok, for those of us who think in messed-up "english" units, a little less than six gallons...

I stand by what I said. Half a kilo of chocolate, a quarter kilo (max) of black patent, quarter kilo (max) of lactose (probably an eighth), and at least 3 kilos of LME. I'd probably forget the lactose and add some crystal, and then I think you've got a decent stout.
