What do you do if you don't have this information for a particular grain?

Is there a database for each specific grain/malt? I see that some of the ones I thought I bought are not in Beer smith, and I was trying to figure out the info on what I bought. Just so I could see the projections.

Domestic Two-Rowed pale malt
Belgian Cara-pils Malt
Belgian Cara-Vienne Malt
British Light crystal Malt

Specialty Grains Profile used in Brewing

I forgot about this chart, I have not brewed in awhile. What do you do about the wide ranges of some of the grains. If I am concerned should I just make sure I get the info before leaving the store? I guess for now it is a guess.
