The roasted barley definitely gets the color, but C60 will have a different flavor than C20 and I like it in my red beers. Like I said, it's a subjective thing and your recipe will no doubt make a solid beer without making that change.

Is the crystal more of a caramel flavor? Maybe i"ll buy enough for two batches and do some modifications with one of them.

Yes, exactly. The 20 is sweeter and more one-dimensional I think, while the 60 has a richer caramel flavor. And a big +1 for test batches in the name of science!
