Yooper just took 1 as a base. Divide it by 5, then multiply it by 7, you come up with 1.4. Then you can use that for each ingredient.
From 5 to 6 gallon? Take 1, divide by 5, then multiply by 6. 1.2 is your factor.
Any sizes up or down will work. To double check yourself, multiply the original number by the factor. It should come up as the size you are going to. if you are going bigger, the factor will be bigger than one. If you are making a smaller batch, the factor will be less than one.
