Default Questions about using Juice!

Hello! Im just a beginner, so I thought I'd pop in with my endless list of questions!

My mother has about 6 gallons of grape juice in her freezer. Her juicer uses steam to juice the grapes, and she says that the steaming process destroys the enzymes used in wine making so the juice wouldnt make wine.

My question is, will the juice work if I am making homemade soda? I found a recipe for grape soda that i'd like to try, and I'm hoping I can still use that juice!

Thank you!

You can use steam extracted juice for wine. The "enzymes" aren't destroyed- you add yeast to make wine out of juice, and that is what does the work.

You could make soda also, though, if you want.

+1 on what Yooper said. Yeast make the wine. Enzymes are usually referred to in mashing for starch to sugar convergence. I think if it's considered pasteurized then adding the yeast shouldn't be an issue.

Natural grape soda sounds awesome. I'd do it!
