Default Need to Tweak a recipe a bit

Going to brew up a saison, partial mini mash with a full 5.5 gal boil. I'm going to use 3711 French Saison yeast and I hear it is a beast. I'm looking for 7-7.5% abv and considering how efficent this yeast is I think I need to cut back on my fermentables a bit but not exactly sure where I can do that without hurting the structure or color of the beer.

Any suggestions on what I can cut back on?


47% 4 0 Briess LME
24% 2 0 Briess DME Golden Light
12% 1 0 Candi Sugar, Clear
12% 1 0 American Two-row Pale
6% 0 8 Flaked Wheat

i'm not sure you are achieving the requirements for a saison...

IBU: Saison: 20-35, This recipe: 36.7
OG: Saison: 1.048-1.065, This recipe: 1.067
FG: Saison: 1.002-1.012, This recipe: 1.013
SRM: Saison: 5-14, This recipe: 5 <-- match
ABV: Saison: 5-7%, This recipe: 7.2%
Ingredients: Pilsner mainly, vienna, munich, and sometimes wheat and spelt. Sugar and honey to thin if desired. Sometimes dry hopped. Noble hops, Styrian or EKG common. Herbs and spices are often used to add complexity and uniqueness in stronger versions.

I think your hops are definitely good.

I don't really think you need to worry too much about the yeast efficiency. Saisons are typically quite dry.I see you're using grains of paradise which is good. honestly i think this will be a good beer as is.

I made a Saison recently that got down to 1.003 or so. That put my ABV over 8% even though my recipe projected ~6% (edit for actual #s). My software predicted 1.015 FG, so I can see where you might be concerned about the fermentables. I used a pound of honey in 3gal, though, which was over the top... But the beer is amazing! Can't wait to make more Belgians
