sumerizing from The Joy of Homebrewing.
You can add or take away some of the extract but it will change the profile.
I am on my 8th batch so I am not an expert by anymeans. If you didnt add anymore LME and added the same about of hops it would be a little more bitter. I am sure someone on here would know by how much.

pardon my ignorance but isnt the volume partially replaced when i add the starter back in the wort ? this is a sam adams clone and i dont want to change the profile too much (it already got a lot of hops). dont have anymore DME or LME right now....can i use honey ?

First of all, good on ya for making a starter!

If you don't replace that cup of DME when you brew, it will make beer and it will no doubt be good. As you bought a Sam Adams clone kit, it will change it away from its intended. You could certainly add honey but again, it would change the beer. If you are really set on replicating Sam Adams, I would get down to your LHBS and pick up a pound or two of DME to replace what you've used for your starter and to use for future starters. Even though I am an AG brewer, I always have a mess of DME on hand for starters.

well i am pretty sure it wont taste JUST like sam adams anyway so what can i add to replace the lost sugar that has the least effect on flavor ?

wouldnt honey added to the wort during boil just contribute sugar not flavor ? i thought that honey for flavor was added after/during primary fermentation ?

If you add the whole starter, you will add back the malt that you borrowed. You won't quite get the same OG because the starter will have fermented, and the starter will contain some alcohol; but it would have the same effect as if you hadn't made the starter (except you'll have a lot more yeast, which will be good for the brew).
