You also have a problem with Chicago liquer laws. I lived there for a very long time. Licences are hard to get, brewing even harder. Its not a very friendly town for the microbrewer. I thought myself many a time of various north side neighborhoods that could easily support a brewpub. That said, land/space is very expensive anywhere in any of those places on the scale you need for commercial brewing. Im sure lots of other folks have thought the same thing. Gotta ask yourself why so very very few have been sucessful in Chicago. There are greener pastures.

Yes, but before you attended that college class on math, didn't you have highschool math to work your way up? You have to start somewhere, and homebrewing is like the K-12 of the school world. Seibel expects you to know something about beer before you get there. I'm not saying you CAN'T attend if you know nothing, just that it's like walking into college without ever attending highschool.... not many people can do it.

I looked into Seibel's a few years back, but decided that it wasn't for me. They are a direct link for getting into the brewing industry, but I've since been pretty much handed a job at an "opening soon" brewery, so I dropped the Seibel thing.

In talking to the guys at Seibel, I was sent pages upon pages to study before they would even concider an application from me. I've been brewing for years, and the stuff they sent me on yeast biology and fermentation is just now starting to make sense.

I don't concider it ignorant or arrogant. It sounds like you know what you want to do, which is great. It also sounds like you're passionate about it, which is even better. Good luck.
