I brewed an Irish Red two weeks ago. I cooled the wort and pitched the yeast and put it in the brew closet. It took 3 days for any activity to show up in the airlock and it never did get very vigorous. The krausen was small compared to previous brews and it bubbled for a full two weeks! Tonight I racked it to the 2ndary even though it was still putting out a bubble every 54 seconds.
When I racked it I took a sample and my FG was 1.013 which was about .002 higher than I expected. So maybe it will finish in the 2ndary. I tasted the sample and surprise, it tasted great.
I guess it goes to say, RDWHAHB.
Maybe after 3+ years of brewing, I've finally learned that lesson.
