I just had a scare with two batches.... white floaty things in secondary... a color change.... and a completely different taste profile (was convinced I had made 10 gallons of vinegar, or had a lacto infection).
It was bottled so I figured I'd just wait the four weeks to see if the vinegar would be usable.
Four weeks later and the vinegar sucks, but the beer turned our great!
