I soaked some organic banana chips in vodka and they seem to have absorbed alot of it. Should I be worried that this will impart too much of an alcohol flavor to my beer?
 
Depends on the volume...well and quality of the vodka. But you should be fine, I'd just be worried about imparting a banana flavor, but that's just me :)
 
I'd be more worried it will impart too much banana flavor personally. What type of beer are you making?
 
It'd be an interesting experiment to try using a Bavarian hefe yeast or a mix of something like 1056 and the Bavarian hefe and push the fermentation towards the banana esters.
