Default Forgot to test specific gravity and potential alcohol scale

I am brewing my first batch but forgot to test the specific gravity and alcohol scale before locking the carboy. Fermentation has already started. Am i right to assume that I should let it be or would it be fine for me to get a sample with the beer thief and still get an accurate reading?

Up to you.
If everything went to plan and you want to leave it then fine.
But the only way you'll know is to test it.

I know what I'd do and it would entail taste testing the sample.

Too late. If this is extract, you can just use the calculated value for the original gravity.
